Manual harvest. The grapes are selected on a bunch sorting table, destemmed, and then gravity-fed into 12,000-kilogram stainless steel tanks. Spontaneous malolactic fermentation takes place in 500-liter French oak barrels. Aging takes place for 12 to 16 months in 500-liter barrels and 35-hectoliter foudres.
