Cold pre-fermentation for 6 days at a temperature of 14ºC. Fermentation takes place in 20,000 liter tanks. Fermentation at a controlled temperature of 28°C for 30 days. Malolactic fermentation for 28 days at 20°C. Aged in new French oak barrels for 18 months, with racking every six months in the underground cellar with a depth of 10 meters. Unfiltered and unclarified.
