Jean-François and Anne Ganevat run their family domaine in Rotalier, in the southern Jura, farming biodynamically and certified organic since 2006. Kopin! is a négoce cuvée — Ganevat sources grapes from trusted growers outside the Jura, typically Chardonnay from the Mâconnais, Riesling from granite soils in Alsace, and Savagnin from the Jura itself, all co-fermented together, with the blend varying by vintage. The name is a playful phonetic spelling of "copain" — French for friend — conceived as a wine for sharing, with a label by Michel Tolmer, the illustrator behind the natural-wine graphic novel series Mimi, Fifi et Glouglou.

Fermentation proceeds with indigenous yeasts, and the wine sees no fining or filtration, spending 18 to 24 months on full lees in old 600-litre demi-muids and large foudres; sulfur is kept to an absolute minimum, added only at bottling. The result is a pale golden white — fresh and mineral, with aromas of pear, apple, white flowers, and chalk, and a palate of citrus, peach, and saline minerality underpinned by electric acidity and a long finish. Wineanorak.com scored the 2018 vintage 95 points, calling it "quite profound," while importer Kermit Lynch describes it as "a blend very few vignerons could get away with" — the outcome, he notes, is "inspiring."
