5 plots, totaling 1.2 hectares of vineyards over 100 years old, located between 510 and 560 meters above sea level with clay and sandy soils. 85% Mencía, 15% Alicante Bouschet.
Hand-harvested. Fermentation takes place in 500 and 1,000-liter tanks, with 40% whole cluster grapes. Each plot is vinified separately, including the white grapes in the blend, just as they appear in the vineyard. The grapes are gently foot-trodden, and fermentation is spontaneous with native yeasts. Maceration lasts between 14 and 28 days. Afterward, the juice is drawn off and pressed, then left to settle for 7 days. Aged for 12 months in 500-liter French oak barrels.
