El vino San Román proviene de viñedos con más de 40 años de antigüedad ubicados en las localidades de Morales de Toro, Villaester, Pedrosa del Rey y San Román de Hornija. El suelo es pedregoso y areno-arcilloso. La uva utilizada es Tinta de Toro (Tinto Fino).
La vinificación se realiza con levaduras indígenas en acero inoxidable, separando los racimos por parcela. Posteriormente, el vino madura durante 24 meses en barricas nuevas y usadas de roble francés y americano, de 225 y 500 litros.
En nariz, presenta una expresión frutal con notas especiadas y tostadas del roble. En boca es sabroso y frutoso, con buena acidez y un final largo. El vino destaca por su frescura y equilibrio, a pesar de la dominante presencia de madera que le confiere una textura tannica.
Según las puntuaciones de críticos, el vino obtuvo 94 puntos según Robert Parker y 95 puntos según Peñín.
El San Román es un vino complejo y potente con gran equilibrio entre la fruta madura y los matices tostados del roble. Es uno de los mejores ejemplares producidos en esta región, especialmente destacado por su acidez y frescura que prometen una evolución óptima en botella.

The 2018 San Román was produced with Tinta de Toro grapes from a cool and wet year that delivered a healthy crop. The grapes are from different organically farmed vineyards in the villages of Morales de Toro, Pedrosa del Rey and San Román de Hornija and were vinified by plot in stainless steel with indigenous yeasts. It matured in a combination of French and American oak barrels for 24 months. This is very young, and compared with the polished 2017, it feels raw. But 2018 has to be one of the finest vintages here; the oak is quite dominant and tannic, but the freshness and balance will make it develop beautifully in bottle. It has ripeness and black fruit and is spicy, with a touch of licorice and ink. This wine has a lot of everything! It's one of the years with more acidity since they started here in 1997. 112,000 bottles produced. It was bottled in February 2021.

Mariano García founded Bodegas Mauro in Tudela de Duero (Valladolid) in tribute to his father. He was Vega Sicilia's winemaker from 1968 to 1998, and today it is run by his sons: Alberto, in sales and management, and Eduardo, in winemaking.
Tudela de Duero was left outside the Ribera del Duero appellation when it was created, in 1982. That is why Mauro's wines are sold as Vino de la Tierra de Castilla y León.
The vines, bush-trained on clay-limestone soils, are farmed organically and without herbicides, with yields of 3,000 to 5,000 kilos per hectare, and the harvest is by hand.
Mauro, the reference wine, is mostly Tempranillo with some Syrah, aged in foudres and barrels. Mauro VS, Vendimia Seleccionada, is a Tempranillo cuvée from the best plots of each vintage. Terreus comes from the Paraje de Cueva Baja, in Tudela de Duero, has been made separately since the 1996 vintage and is not made every year.
The family also has other wineries: Maurodos, in Toro, which makes San Román and was founded in 1997, and Garmón, in Ribera del Duero.
