The soil is composed mainly of limestone. 100% Pinot blanc.
The grapes are hand-harvested early to preserve freshness. After the first fermentation, the base wine is bottled with yeast and sugar to start a second fermentation in bottle. The wine is then aged on its lees for at least 24 months, adding complexity and texture. After disgorgement a small dosage (Extra brut: 3gr/L) is be added to adjust sweetness before final corking.
