Procedencia y elaboración
El vino es un Châteauneuf-du-Pape producido en la región del Ródano, Francia. Proviene de una viñedo de apenas una hectárea con certificación ecológica, ubicado en el lugar-dit Les Saummades. La uva principal es la garnacha (95%), complementada con syrah (5%). Se realiza vendimia manual y selección en viña, seguida de una maceración que dura entre tres semanas y un mes con levaduras autóctonas. El vino se cría durante 12 meses en barricas de roble francés llamadas "demi muids" de 600 litros.

Perfil esperado o notas descriptivas
El Fontavin David et Goliath es un vino con cuerpo completo, cremoso y sedoso. Presenta una riqueza notoria, longitud y pureza sin excesos de madurez ni peso. Las frutas predominantes son cerezas y duraznos, que se complementan con notas sutiles de especias secas, tomillo y hoja de laurel en el final.

An impressive follow-up to the 2015 version, the 2016 Chateauneuf du Pape David et Goliath is full-bodied, creamy and plush, showing remarkable richness, length and purity, without excessive ripeness or weight. Cherry and peach fruit picks up hints of dried spices, thyme and bay leaf on the long finish. It's almost all old-vine Grenache, sourced from the rolled stones of the Les Saummades lieu-dit and aged in demi-muids.

The Chouvets have farmed vines in the southern Rhône for generations, but until 1989 they made and bottled nothing under their own name. That year they took the step: producing, bottling and selling on their own account.

Hélène Chouvet, the seventh generation, came to work full-time in 1996 and runs the house today, based in Courthézon.

Forty-five hectares, all organic since 2008. They are spread across eight separate areas, and that spread is literally the map of what the family has assembled over time: Châteauneuf-du-Pape, Gigondas, Vacqueyras, Côtes du Rhône and Muscat de Beaumes-de-Venise.

Among their plots is bush-trained vineyard with eighty-year-old vines on red clay and galets roulés.
