Manual harvest in 20kg boxes. Alcoholic fermentation with native yeasts and 30% whole clusters. Light daily pumping over for a gentle extraction. At the end of the alcoholic fermentation, light pressing and direct transfer to barrels where malolactic fermentation takes place. Aged for 12 months in a 500l used French oak barrel.

Las Pedreras was founded in 2020 in Villanueva de Ávila — the village's first and only winery — restored in the historic Arroyuelos neighbourhood. The name comes from Pico Las Pedreras, the mountain that dominates the valley horizon. Behind it are Bárbara Requejo Frutos, a winemaker trained at Château Haut-Brion, Pierre Peters and Peay Vineyards, and Guzmán Sánchez de la Parra, a local native and chef-owner of La Querencia restaurant, whose family farmed the vineyards.
The plots are old-vine Garnacha and Albillo Real on coarse granitic sand between 900 and 1,200 metres in the Alto Alberche valley. The altitude and north-northeast aspect slow ripening and preserve natural acidity: vivid, taut wines built for ageing. Organic and biodynamic farming, spontaneous fermentation with indigenous yeasts, no additions.
Each plot has its own name: Vertiente de las Ánimas, Pelito Lindo, Linarejos, La Coronela, Corral de Gargantilla.
