The stem is separated from the grapes in the winery, where fermentation begins. Maceration takes place in stainless steel tanks at a controlled temperature of 28-30ºC. After 22 days of maceration, the grapes are separated from the must and malolactic fermentation begins. Aged for 12 months in used French oak barrels.
