Hand-harvested. Cold pre-fermentation for 5 to 9 days. Alcoholic fermentation with native yeasts. After pressing, the wines rest in vats for about 2 weeks before being transferred to barrels. Malolactic fermentation is carried out systematically. Aged for 12 months. Then they are transferred to vats where they will remain for about 3 more months before bottling. Unclarified and unfiltered.
