Sourced from 3 hectares of vines of 15 years on average, located on granite slopes with a slope of 30%. 100% Syrah.

The vintage is 100% destemmed. It begins with a cold maceration (12°C) for a week, then fermentation occurs naturally (without yeast). Temperatures are regulated during the 21 days of vinification. In the morning and afternoon the tanks are raised and saturated with CO2. Aging for the first 3 months in vats and then a year in oak barrels for 2 to 8 years.
