Bouchard Père et Fils, founded in 1731 and owned by the Henriot family since 1995, is one of Burgundy's largest private domaine owners, and this Les Avaux belongs to their Domaine range — meaning every vine is estate-owned, here from parcels first acquired by the house in 1791. Les Avaux is a Premier Cru climat in the southern sector of Beaune, east- to south-east-facing at 230–250 m altitude, with deep red clay-limestone soils that extend more than three metres without reaching bedrock and are fed by subsurface water draining from higher on the hill. Bouchard holds 4.36 ha of the climat's 13.8 ha total, and the name 'Avaux' derives from the medieval term vaux, meaning a hollow or depression in the slope. 100% Pinot Noir.

The domaine obtained organic certification for all its vineyards in 2025. Grapes are hand-harvested in 13 kg crates and sorted bunch by bunch at the table; maceration runs 12–16 days, followed by 16–18 months in French oak barrels with 25–30% new wood. Those deep, moisture-retentive soils give Les Avaux a consistently rounder and softer character than the stonier, more structured central Beaune Premiers Crus.

La parcela Les Avaux se sitúa en el sector sur de Beaune, con orientación este-sureste entre 230 y 250 metros de altitud. Ocupa una hondonada o depresión en la ladera, tal como indica el origen medieval de su nombre. Los suelos son arcillo-calcáreos de color rojo, con más de 3 metros de profundidad sin llegar a la roca madre. Gracias al aporte hídrico subsuperficial desde la parte alta de la colina, el vigor de las viñas se mantiene incluso en años secos. La bodega posee 4,36 hectáreas de estas 13,8 totales.

La viticultura se encuentra en proceso de conversión ecológica, iniciada en 2009 y con certificación completa prevista para la añada 2025. La vendimia es manual en cestas de 13 kg, con selección racimo a racimo. La crianza se realiza en barrica de roble francés durante 16 a 18 meses, utilizando un 25-30% de madera nueva. La uva empleada es exclusivamente Pinot Noir. Los suelos profundos de Les Avaux generan vinos más suaves y redondos en comparación con los premiers crus centrales de Beaune, como Grèves o Teurons.

The house did not begin in wine. Michel Bouchard founded it in Beaune in 1731 as a cloth business, and it was his son Joseph who in 1746 began selling wine and, above all, buying vineyards. The first purchase came in 1775 and it was no ordinary one: Volnay Les Caillerets.

The other landmark is from 1820, when Bernard Bouchard bought the Château de Beaune, a former royal fortress built in the fifteenth century on the orders of Louis XI. The house's cellars are still there: a military building turned into a winery.

Almost three centuries of buying parcel by parcel have left an uncommon holding: some one hundred and thirty hectares across four hundred and fifty plots, with twelve hectares of grand cru, seventy-four of premier cru and four monopoles. It is one of the largest vineyard owners in the Côte d'Or.

In 1995 the family sold the house to Joseph Henriot, who brought it into a group alongside Champagne Henriot and the Chablis house William Fèvre. In 2022 it passed to Artémis Domaines, owned by the Pinault family.
