Domaine des Lauriers is a family-run estate in Castelnau-de-Guers in the Hérault, farmed by the Cabrol family since 1969 across 45 hectares planted to eleven to fourteen varieties. Their Picpoul de Pinet falls within the eponymous AOP, an independent appellation since 2013 covering six communes bordering the Étang de Thau lagoon near Sète, where Piquepoul Blanc has been cultivated since the sixteenth century on the area's characteristic red marly limestone gravel soils — known locally as calloutis marno-calcaire rouge — that lend the wines their distinctive mineral edge. The appellation's benchmark pairing remains oysters and Mediterranean seafood, an alliance that speaks directly to the grape's naturally high acidity and iodine-tinged character.

This 2021 is produced entirely from Piquepoul Blanc, harvested at night to preserve aromatic freshness, then gently pneumatically pressed and cold-settled at 8°C under inert gas before a slow three-week fermentation in stainless steel at a maximum of 17°C — no oak at any stage. The result is a bright, green-tinged wine with a nose of exotic fruit, peach, lemon, white flowers, and delicate notes of iodine and white pepper; the palate is fine and refreshing with a saline streak and a clean, long citrus finish. At 13% alcohol and sealed with a screwcap, it is built for near-term drinking alongside grilled fish, shellfish, or any simply prepared seafood from the Mediterranean table.
