The Cabrol family settled in Castelnau-de-Guers, in the Hérault, in 1969. The vineyard sits between three things: the Mediterranean, the Languedoc garrigue and the Étang de Thau, the salt lagoon that separates this strip from the open sea.
What sets the house apart is its position within the appellation. Picpoul de Pinet is still cooperative country, and the Cabrols are among the few producers who make and bottle their own wine rather than delivering the fruit.
The soil is red limestone marl. Fourteen different varieties are planted, among them piquepoul, the emblematic grape of the area and the only one allowed in the appellation.
