Destemming and partial crushing, alcoholic fermentation in wooden vats and open stainless steel tanks. Maceration for 25 days. Malolactic fermentation for 3 months in wooden vats and closed stainless steel tanks. Aged in French oak barrels. It is clarified and filtered before bottling.
