Las Olas Del Melillero
Vineyards located in the Montes de Málaga Natural Park. They are dry-land, mountain vineyards, located between 800 and 1000 m above sea level. with extreme slopes between 46 and 76%. The Montes de Málaga Natural Park has extremely old and complex soils. Philite (slate of clay origin) predominates, which is 600 million years old. but in the same plot there are also grawacas, schists, halberd limestone, silica, quartz, sandstone, clay and magma intrusions. Pedro Ximénez grapes come from small plots between 30 and 100 years old, while Petit verdot, Syrah and Tempranillo vines were planted in the 90s at the historic Finca de La Fresneda. 6,500 bottles.
Harvested by hand in 9 kg boxes. For the red varieties, fermentation and aging in French oak barrels for 14 months. For Pedro Ximénez, fermentation and aging in stainless steel tanks. Grand-Vas method.
