Yannick Cadiou is an agronomist and oenologist and, after working in the Loire and Languedoc, managed the viticulture of a 100-hectare winery in Chablis for almost three decades. He now concentrates on the intensive maintenance of his 2 hectare plots in Chablis. The work in the vineyard is important to him as he presents himself not as a domain (winery) but as a vigneron (winemaker). In the cellar, Yannick Cadiou works minimally, gives the wines their maturation time and dispenses with all other auxiliary substances except for a small addition of sulfur during bottling. The result of his work are very subtle and pure wines with a distinctive minerality, tension and freshness built on a beautiful acid structure.
