Vineyard located in the municipality of Cairanne (on the left bank of the Rhône), opposite Dentelles de Montmirail and Mont Ventoux. Planted on stony clay-limestone slopes, on gentle slopes exposed to the sun.
Traditional vinification, cold pre-fermentation for 48 hours, 4 weeks of vatting and alcoholic fermentation for 18 days with pumping over and punching down. Malolactic fermentation under pomace to set the color. Sulfur Free Aging in concrete vats during the winter on lees in order to seek hydrolysis of the yeasts to provide maximum sweetness.
