Manual harvest in boxes of 16 kilos. Soft pressing for several days in stainless steel tanks, fermentation in a 4,500-liter third-year foudre, two 2,500-liter second-year foudres, and a new 2,000-liter foudre. Native yeasts. Aged for 9 months in oak foudres.
