80% is destemmed, crushed and kept on the skins for 2 days. It is then pressed and aged in a stainless steel tank. The other 20% is harvested 1 month later, destemmed, crushed and left on the skins for 25 days. This part is aged for 4 months in 225-litre French oak barrels. Before bottling, it is assembled and left to rest for 1 month. Without clarifying, without filtering and without added sulphites.
